A strict vegetarian guest can be accommodated when the requirement is communicated before arrival. Her meals can include thoughtfully prepared vegetables, salads, pasta, rice, legumes, cheeses, eggs, appetizers, and desserts according to her preferences, rather than simply removing the meat from another guest's plate.
During the asado, a separate vegetarian selection can be planned so she can participate in the experience while receiving a complete meal.
